Baking & Cooking Apples - used primarily for cooking, as opposed to a dessert apple which is eaten raw. They are generally larger, and possibly tarter than fresh eating varieties. Some varieties also have a firm flesh which tends to hold its shape when cooked.
Cider Apples - also called 'spitter apples' have bitter tannins and are more acidic than regular eating apples with a dry flavour. The acidity and tannins make these apples not very palatable for the tongue, hence name 'spitter', owever, they are perfect for making cider, a popular drink.
Crab Apples also for Cider - basically miniature apples with high levels of tannins (bitterness) which may be used in baked goods, jams, jellies etc. Also used for making cider.
Fresh Eating Apples - varieties that are great for eating as is. They are pleasant to eat with a gentle balance of sweet and acid.
Long Keeping Apples - apples that will remain on the tree through the winter months or which store well into the spring under cool but non-refrigerated conditions
